I really like the looks of AT wheels with flat profile (I think this is how it’s called), such as Meepo cyclones 165mm or Metroboard 155s.
What are the options that are available today that may fit Matrix 12mm axles ? (Meepo only fits 8mm/10mm axles).

Well, for a 12mm axle you just need hubs that can run 28mm OD bearings, the tire is kind of irrelevant there as the tire mounting pattern is generally pretty universal.
After that you need to figure out which one of the following tires you want to mount, and/or if you want to run wide hubs or not.
For regular width hubs, metroboards 155, BKB 150, meepo 165 are your primary options.
For wide hubs, Xcell 165x62, qing da 200x75 are the ones i know of.

Lots of wheel hub options. Search Etox, Trampa, X-cell, Newbee (my favourite for price), Tomiboi (just bought some Hubba hubs to try).
And then the Meepo cyclones will go on all of these
