I’ve wanted to make one for quite some time now but the wife approval rating is SUPER low

And unfortunately nowhere to store it in my apartment, and I do not have a welder.

Can you do it? Definitely, will it be pricey? Most likely

Think you can use ESk8 parts like VESC and motors?

I imagine the battery/BMS is very similar. Maybe the throttle and such is more like scooter parts…

Yeah most likely, geared down motor with a chain, big vesc.

You could use an ADC throttle, vesc is also compatible with that
