I used the Maple from roarocket and I use 9 or 10 plys.
You can if needed order single sheets in colors.
Common is 9 ply. (most if not all MBS) You will have 2 cross grains the rest are face layers.

standard push deck is this format.

1. Face
2. Center layer
3. Cross-band
4. Center layer
5. Cross-band
6. Center layer
7. Face

longboard or 9ply is commonly.

1. Face
2. Center layer
3. Cross-band
4. Center layer
5. Center layer
6. Center layer
7. Cross-band
8. Center layer
9. Face

You can always add a extra cross-band or center layer if needed.
more layers means less flex, but then again this depends on what materials you use.
So pressing can get as complex as you want it.
