Did you ever figure this out? Mines doing the exact same thing.

Hello and welcome to the forum!
What I found in this particular case was the sensor inside the remote that tells the position of the throttle was going bad causing the throttle value to jump all over the place. What I did to confirm this was hook it up to the vesc tool and look at the throttle value.
I have also had interference issues in the past with the VX1, so I switched it to the vx2 pro.
